Turkey & Sweet Potato Meatballs

- 560 g Ground turkey
- 800 g Sweet potato
- 400 g Green beans
- Egg × 1
- 60 g Breadcrumbs
- 4 cloves Garlic
- 20 g Fresh parsley
- 40 g Grated parmesan
- 4 tbsp Olive oil
- 2 tsp Smoked paprika
- 8 g Salt
- 4 g Black pepper
Method

Preheat the oven
Preheat the oven to 200°C.

Peel and cube the potato
Peel and cube the sweet potato into 2cm pieces.

Toss on a baking tray
Toss on a baking tray with half the olive oil, smoked paprika, salt and pepper.

Roast 25-30 minutes
Roast 25-30 minutes until golden at the edges.

Mix the Meatballs
In a bowl combine ground turkey, beaten egg, breadcrumbs, grated garlic, chopped parsley, parmesan, salt and pepper. Mix gently with your hands — overworking makes them dense.

Roll & Sear
Roll into meatballs (about 25g each). Heat the remaining olive oil in a pan over medium heat and sear the meatballs 2 minutes per side until golden all over.

Finish in the Oven
Transfer them to a baking tray and finish in the oven for 8-10 minutes until 74°C internal — if you don't have a thermometer, cut one open: it should show no pink in the middle.

Sauté the Beans
Trim the green beans. Sauté in the meatball pan with a pinch of salt for 4-5 minutes until bright green and tender-crisp.

Build the Boxes
Divide sweet potato, meatballs and green beans between 4 meal-prep containers. Top with extra chopped parsley.
