- 680 g Flank steak or sirloin
- 2 tbsp Olive oil
- 2 cloves Minced garlic
- 1 tsp Chili powder
- 1 tsp Cumin
- Lime × 2
- Small flour tortillas × 8
- 120 g Shredded lettuce
- 80 g Diced red onion
- 120 g Diced tomato or red pepper
- 4 tbsp Chopped fresh cilantro
- 56 g Shredded Mexican cheese blend
- 60 g Light sour cream or Greek yogurt
- 8 g Salt
- 4 g Black pepper

Marinate Steak
In a bowl, whisk olive oil, garlic, chili powder, cumin, salt, pepper, and lime juice. Coat steak and marinate for at least 30 minutes (up to 2 hours).

Heat a grill pan
Heat a grill pan or skillet over medium-high.

Cook the steak 4-5 minutes
Cook the steak 4-5 minutes per side for medium-rare, or until done to your liking.

Let it rest 5 minutes
Let it rest 5 minutes, then slice thinly against the grain — across the direction of the meat's fibres — so each slice is tender.

Warm Tortillas
Heat tortillas in a dry skillet or directly over a flame until lightly charred.

Spread the crema
Spread a small spoon of sour cream or Greek yogurt onto each tortilla.

Add lettuce
Add lettuce, steak slices, onion, tomato/red pepper, and cheese. Sprinkle with cilantro.

Plate tacos with lime wedges for squeezing.
