  1. Shape the patties

    Step 1: Shape the patties

    Mix the beef with the breadcrumbs, egg, a quarter of the onion (grated), salt and pepper, then shape into two oval patties.

  2. Sear both sides

    Brown the patties well in a hot pan with a little oil, about 3 minutes per side, then set aside — they finish in the gravy.

  3. Brown the mushrooms

    Step 3: Brown the mushrooms

    Add the butter, sliced mushrooms and remaining onion to the pan and cook until deeply browned.

  4. Build the gravy

    Step 4: Build the gravy

    Pour in the beef stock, scrape the bottom of the pan and simmer until it thickens into a gravy.

  5. Smother and simmer

    Return the patties and any juices, spoon the gravy over and simmer gently until cooked through.

  6. Serve

    Sprinkle with parsley and serve — mashed potatoes are the classic partner.
