    Brown the mince hard in the oil in a large pot over high heat, breaking it up with a spoon, 5–6 minutes until deeply browned; lift it out, leaving the fat behind.

  2. Soften the Veg

    Cook the onions, peppers and garlic in the same pot over medium heat until they soften and brown lightly at the edges, 6–8 minutes.

  3. Toast the Spices

    Step 3: Toast the Spices

    Add the bay, chili powder, cumin, oregano and smoked paprika and toast for a minute, then stir in the tomato paste until it darkens.

  4. Simmer Thick

    Step 4: Simmer Thick

    Return the beef with the chopped tomatoes and stock, bring to a boil, and simmer uncovered until thick and rich, 25 minutes.

  5. Load the Bowls

    Season to taste with salt and pepper, then serve over rice with the sour cream, grated cheddar, cilantro and lime wedges.
