The original cocktail — bourbon, a sugar cube dissolved with bitters, and a big expressed orange peel. Timeless.

- 60 ml Bourbon whiskey
- Sugar cube (or 1 tsp sugar) × 1
- 3 dashes Angostura bitters
- 1 strip Orange peel
- Large ice cube × 1
- 5 ml Water
Method

Place a sugar cube
Place a sugar cube in the bottom of a heavy-bottomed rocks glass.

Saturate with 3 dashes
Saturate with 3 dashes of Angostura bitters and a few drops of water.

Muddle firmly
Muddle firmly until the sugar is fully broken down into a syrup.

Add the Whiskey
Pour in 60ml of good bourbon (nothing too delicate — look for something with caramel and baking-spice notes).

Add Ice & Stir
Drop in one large ice cube (or several smaller ones). Stir gently with a long bar spoon for 20-30 seconds until well chilled and slightly diluted.

Cut a wide strip
Cut a wide strip of orange peel, avoiding the white pith.

Hold it peel-side down
Hold it peel-side down over the glass and snap it to express the oils onto the drink — you should see a fine spray.

Rub the peel around
Rub the peel around the rim, then drop it in.
