- 80 g Flour (all-purpose)
- 100 ml Milk (whole)
- Egg × 1
- 0.3 sach. Baking powder
- 20 g Butter
- 2 tbsp Chocolate-hazelnut spread
- 15 g Almonds
- 2 g Salt
- 15 g Hazelnuts
Method

Make the Dry Mix
In a large bowl, whisk together the flour, baking powder and a pinch of salt until evenly combined.

Separate the egg
Separate the egg — place the yolk in a small bowl and the white in a clean, dry bowl.

Whisk the yolk together
Whisk the yolk together with the milk until smooth, then pour the egg-milk mixture into the dry ingredients.

Stir in the melted butter
Stir until you have a smooth batter with no lumps, then melt half the butter and stir it in until incorporated.

Whip the Egg White
Add a small pinch of salt to the egg white and whisk vigorously (or use an electric whisk) until stiff peaks form — the mixture should hold its shape when you lift the whisk. This is what makes the pancakes light and fluffy.

Fold In
Using a spatula, gently fold the whipped egg white into the batter in two additions. Use slow, sweeping motions from the bottom up — do not stir or you will knock out all the air. The batter should be light and airy with a few white streaks remaining.

Heat a non-stick frying pan
Heat a non-stick frying pan over medium heat and add a small knob of the remaining butter.

Pour roughly 60ml of batter
Once it foams, pour roughly 60ml of batter per pancake.

Cook
Cook for 2-3 minutes until bubbles form across the surface and the edges look set. Flip carefully and cook for another 1-2 minutes until golden brown on both sides.

Repeat
Repeat with the remaining batter, adding a little butter between each batch.

Stack the warm pancakes
Stack the warm pancakes on a plate.

Spread a generous spoonful
Spread a generous spoonful of Nutella between the layers and on top — the heat from the pancakes will soften it into a glossy drizzle.

Scatter with crushed hazelnuts
Scatter with crushed hazelnuts and sliced almonds for crunch and serve immediately.
