Minced Beef & Broccoli Stir Fry

Takeaway-style sticky beef and broccoli, but faster: mince instead of steak soaks up a glossy soy–oyster sauce over jasmine rice.

- 75 g Jasmine rice
- 125 g Beef mince
- 0.5 tbsp Vegetable oil
- 5 g Fresh ginger
- 1 clove Garlic
- 0.3 head Broccoli
- 40 ml Chicken stock
- 1 tbsp Soy sauce
- 0.8 tsp Dark soy sauce
- 0.5 tbsp Oyster sauce
- 0.8 tsp Sugar
- 1 pinch Ground white pepper
- 1 tsp Cornflour
- 0.8 tsp Sesame oil
- 0.8 tsp Sesame seeds
- Spring onions × 1
Method

Cook the Rice
Cook the rice according to the pack.

Mix Sauce & Prep
In a bowl, stir the stock, soy sauces, oyster sauce, sugar, white pepper and cornflour into a smooth sauce with no lumps. Cut the broccoli into small florets, grate the ginger and garlic, and slice the spring onions.

Blanch Broccoli
Blanch the florets — give them a brief boil — in a pot of boiling water for 2 minutes so they finish tender-crisp in the wok, then drain.

Brown the Mince
Get a wok smoking-hot with the oil and brown the mince hard without moving it too much, 3–4 minutes, then stir in the ginger and garlic for 1 minute more.

Toss & Glaze
Tip in the broccoli and the sauce and toss until everything is glossy and thickly coated, 2–3 minutes; finish with the sesame oil. Serve over rice, topped with sesame seeds and spring onions.
