Marry Me Chicken Orzo

- 115 g Chicken breast, cut into chunks
- 80 g Orzo
- Large onion × 1
- 1 clove Garlic
- 25 g Sun-dried tomatoes, sliced (keep some oil)
- 0.5 tbsp Red pesto
- 0.3 tsp Dried oregano
- 0.3 tsp Dried thyme
- 200 ml Chicken stock
- 40 ml Cream
- 12 g Fresh basil
- 15 g Parmesan, to serve

Soften the Base
Soften the diced onion and crushed garlic in the sun-dried tomato oil in a wide pot over medium heat until the onion looks soft and see-through, about 4 minutes.

Seal the Chicken
Add the chicken chunks and cook, turning, until sealed all over — pale golden outside with no pink showing — about 8 minutes.

Flavor & Stock
Stir in the sun-dried tomatoes, red pesto, oregano, thyme and most of the stock and bring to a boil.

Simmer the Orzo
Add the orzo and simmer, stirring often so it doesn't stick, for 7 minutes, topping up with stock if the mixture thickens and starts to look dry.

Cream It
Stir in the cream and cook 3 minutes more until the orzo is just done and the sauce is silky.

Basil & Serve
Tear in the basil, season, and serve showered with parmesan.
