- 800 g Chicken thighs (bone-in)
- 60 g Honey
- 8 cloves Garlic
- 60 ml Soy sauce
- 20 ml Olive oil
- 300 g Rice
- 8 g Salt
- 4 g Black pepper
- 4 sprig Fresh Thyme
Method
-
Season chicken thighs with salt
Season chicken thighs with salt and pepper.
-
Heat olive oil
Heat olive oil in an oven-safe pan over medium-high heat.
-
Sear skin-side down
Sear skin-side down for 5 minutes until golden.
-
Flip the chicken
Flip the chicken.
-
Add minced garlic
Add minced garlic to the pan and cook for 30 seconds.
-
Pour in the honey-soy
Pour over the honey and soy sauce, stirring to coat.
-
Oven Finish
Transfer the pan to a 200°C oven and bake for 20-25 minutes, basting halfway — spoon the pan juices back over the chicken — until the chicken is cooked through with clear juices and the glaze is sticky.
-
Cook the Rice
Meanwhile, rinse the rice and cook it in a pot of salted water (or a rice cooker) until tender.
-
Serve
Rest the chicken for 5 minutes — this keeps the juices in the meat. Serve the chicken over the steamed rice with fresh thyme and a spoonful of the pan juices.
