- 480 g All-purpose flour
- 3 tsp Baking powder
- 1.1 tsp Fine sea salt
- 330 g Unsalted butter
- 450 g Granulated sugar
- 6 ml Vanilla extract
- Egg × 2

Preheat & Prep
Preheat oven to 180°C. Line two baking sheets with parchment paper.

Cream Butter & Sugar
In a large bowl, beat the softened butter and sugar together with an electric mixer (or vigorously by hand) for 2-3 minutes until light, fluffy and pale in colour. Beat in the egg and vanilla extract until smooth.

Whisk together the flour
In a separate bowl, whisk together the flour, baking powder and salt.

Add the dry mixture
Add the dry mixture to the butter mixture in two batches, stirring with a spatula after each addition until a soft dough forms.

Do not over-mix
Do not over-mix.

Roll into balls
Scoop tablespoon-sized portions of dough and roll into smooth balls between your palms.

Coat in sugar
Roll each ball in a small dish of granulated sugar until evenly coated. Place on the lined baking sheets about 5cm apart.

Flatten slightly
Flatten each ball slightly with the bottom of a glass or your palm.

Bake
Bake for 10-12 minutes until the edges are just set and lightly golden but the centres still look slightly underdone — they will firm up as they cool. Do not over-bake or they will lose their chewy centre.

Cool
Let the cookies rest on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely. Store in an airtight container for up to 5 days.
