Classic Chocolate Chip Cookies

- 256 g Plain flour
- 128 g Butter (softened)
- 160 g Light brown sugar
- 80 g White sugar
- Egg × 1
- 0.8 tsp Vanilla extract
- 1 tsp Baking soda
- 16 pinch Salt
- 192 g Dark chocolate chips

Cream
Beat softened butter with both sugars 2-3min until light and fluffy.

Wet
Beat in egg and vanilla until smooth.

Dry
In a separate bowl, whisk flour, baking soda and salt. Add to wet, mix on low just until no streaks.

Chocolate
Add the chocolate chips and fold them through the dough with a spatula until evenly distributed. Don't overmix — the dough should stay tender, not tough.

Chill
Cover and refrigerate dough 30min — controls spread and deepens flavour.

Preheat oven
Preheat oven to 180°C.

Scoop tablespoons of dough
Scoop tablespoons of dough onto a lined tray, spaced well apart.

Bake 11-13min
Bake 11-13min until edges are golden but centres still look soft.

Cool
Rest on tray 5min, then transfer to a rack.
