- 60 g All-Purpose Flour
- 25 g Butter
- 120 ml Water
- 1 egg Eggs
- 30 g Caster Sugar
- 1 tsp Cinnamon
- 200 ml Sunflower Oil
- 1 pinch Salt
Method
-
Cook the choux base
In a saucepan over medium-high heat, bring the water, butter and a pinch of salt to a boil, then dump in the flour all at once and stir hard with a wooden spoon until it forms a smooth ball that pulls away from the sides of the pot.
-
Beat in the egg
Let the dough cool for a few minutes, then beat in the egg until the dough is glossy and pipeable.
-
Heat the oil
Heat the oil in a deep pot to about 175°C — a scrap of dough should sizzle and float straight away.
-
Pipe and fry
Pipe short lengths of dough into the oil, snipping them off with scissors, and fry in batches until puffed and deep golden.
-
Roll in cinnamon sugar
Lift the bites out and drain briefly on kitchen paper, then roll them, still hot, in the cinnamon sugar until coated all over.
-
Serve warm
Serve immediately with warm chocolate sauce for dipping.
