- 100 g Dark chocolate
- Eggs × 2
- 100 ml Cream
- 2 tbsp Sugar

Melt the chocolate
Melt the chocolate gently — in short bursts in the microwave, stirring between each, or in a heatproof bowl set over barely simmering water — and let it cool slightly.

Separate the egg
Separate the egg: crack it and pass the yolk between the shell halves, letting the white fall into a clean bowl.

Whisk the egg white
Whisk the egg white with the sugar to soft peaks — the tip should flop over when you lift the whisk.

Separately whip the cream
Separately whip the cream until it just holds its shape.

Stir the yolk
Stir the yolk into the chocolate.

Fold and chill
Fold the cream and then the egg white into the chocolate — cut down through the middle with a spatula and turn the mixture gently over itself — until smooth with no white streaks. Spoon into ramekins and chill 2 hours.
