- 120 g Dark chocolate (70%)
- 100 g Unsalted butter
- Large eggs × 2
- Egg yolks × 2
- 50 g Caster sugar
- 1 tsp Vanilla extract
- 30 g Plain flour
- 4 tsp Cocoa powder (for dusting)
- 1 g Salt

Preheat oven to 220°C.

Melt dark chocolate and butter in a heatproof bowl over simmering water.

In a separate bowl, whisk together eggs, egg yolks, caster sugar, and vanilla extract until pale and slightly thickened.

Fold the melted chocolate
Fold the melted chocolate into the egg mixture — sweep a spatula down through the middle and gently turn the mixture over, rather than beating it.

Sift in the flour
Sift in the flour and salt, fold until just combined.

Divide among the ramekins
Divide among the ramekins.

Bake for 12-14 minutes — tops set but centres soft.

Let stand 1 minute, run a knife around the edge, invert onto plates.
