Chocolate Banana Bread

Deeply chocolatey banana bread made with ripe bananas and chunks of real baking chocolate. The riper the bananas, the better it gets.

- Banana × 3
- 150 g Flour (all-purpose)
- 80 g Butter
- 120 g Raw cane sugar
- Egg × 2
- 120 g Chocolate bar (baking)
- 75 g Almond flour
- 1 sach. Baking powder
- 40 g Almonds
- 3 g Salt
Method

Prep Dry Ingredients
Preheat the oven to 180°C. In a mixing bowl, combine: the sugar, ground almonds, flour, baking powder & a pinch of salt.

Mash Bananas
Peel the bananas (the riper the better) & add them to a second mixing bowl. Mash the bananas.

Wet Ingredients
Add the eggs & whisk to combine. Melt the butter — short bursts in the microwave or gently in a small pan — then add it & stir again.

Combine
Mix the dry ingredients into the second mixing bowl (the banana mixture). Whisk just until combined, with no dry streaks of flour left.

Add Chocolate
Roughly chop the chocolate & incorporate it into the cake batter.

Generously grease a loaf tin
Generously grease a loaf tin with butter & pour in the cake batter.

Optional: top with chocolate chips
Optional: top with chocolate chips or nuts.

Bake
Bake for 35-40 min at 180°C.

Cool & Serve
Once the top is golden, poke a knife into the centre — if it comes out clean, with no wet batter clinging to it, the loaf is ready. Enjoy cold or at room temperature!
