Coiled Banitsa with Cheese

- 750 g Phyllo sheets
- 600 g Feta or Sirene cheese
- 180 g Butter
- 360 ml Yogurt
- Eggs × 5
- 90 ml Vegetable oil
- 60 ml Water
- 2 g Salt
Method

Prep Pan
Grease your baking tray with a blend of melted butter and vegetable oil.

Butter Sheets
Lay out a phyllo sheet, brush with warm melted butter, and top with a second sheet. Butter the top sheet generously.

Filling
Whisk together the eggs, yogurt, and crumbled cheese with a pinch of salt. Spread the mixture over the sheets.

Roll the sheets
Roll the sheets into a long log.

Spiral the roll tightly
Starting from the center of your pan, spiral the roll tightly into a snail shape.

Repeat
Repeat with the remaining sheets and filling, coiling each new roll around the last until the pan is full.

Bake
Brush the top with remaining butter. Bake at 180°C for 35-40 minutes until golden and crispy.

Rest
Remove from oven, sprinkle lightly with water, and cover with a tea towel for 10 minutes to soften. Serve warm.
