Baked Crispy Chicken with Caesar Salad

Golden oven-baked chicken with a crunchy crumb, sliced over crisp romaine in creamy Caesar dressing. All the crunch of fried, none of the pan-watching.

- Chicken breast × 1
- Egg × 1
- 2 tbsp Flour (all-purpose)
- 3 tbsp Bread crumbs (plain)
- 2 handful Lettuce (Romaine)
- 1 tbsp Caesar dressing
- 15 g Parmesan (shaved)
- 1 tsp Olive oil
- 1 g Black pepper
- 2 g Salt

Preheat & Prep
Preheat the oven to 200°C. Cut the chicken fillet in half horizontally so it's thinner, then flatten it gently with a rolling pin or the back of a wooden spoon until it's an even thickness all over.

Flour Coat
In a deep dish, add the flour with a pinch of salt and pepper. Coat the chicken on both sides.

Egg Dip
In a second dish, add the egg. Whisk it with a fork, then dip the chicken in it on both sides.

Breadcrumb Coat
Add the breadcrumbs to a third plate and coat the chicken on both sides.

Bake
Place the breaded chicken on a greased or parchment-lined baking tray. Brush with a drizzle of olive oil, then bake for 20 minutes at 200°C.

Prep Salad
Meanwhile, wash then cut the salad into pieces.

Mix Salad
In a bowl, mix: salad, Caesar sauce and parmesan shavings.

Check Chicken
Once the chicken is nicely browned and crispy, remove it from the oven.

Serve
On a plate, serve the breaded chicken with the Caesar salad. Add a few shavings of parmesan and pepper.
