One-Pan Chicken Fajita Skillet

- 600 g Chicken breast
- Bell peppers × 4
- Yellow onion × 2
- 4 tbsp Fajita seasoning
- 4 tbsp Olive oil
- Lime × 2
- Flour tortillas × 8
Method

Slice Everything
Slice the chicken into thin strips. Slice the peppers and onion into matching strips.

Season the Chicken
Toss the chicken with the fajita seasoning and half of the olive oil until evenly coated.

Heat a large skillet
Heat a large skillet over high heat.

Add the chicken
Add the chicken in a single layer and cook for 3–4 minutes without stirring, until charred underneath.

Toss and cook
Toss the chicken and cook 2 more minutes until cooked through.

Remove to a plate
Remove the chicken to a plate.

Sizzle the Vegetables
Add the remaining olive oil, then the peppers and onions. Cook for 4–5 minutes, stirring occasionally, until softened with charred edges.

Combine & Serve
Return the chicken to the pan, squeeze the lime over the top, and toss. Warm the tortillas in a dry pan or microwave and serve alongside.
